A new site for the 2021 vintage, this wine was made from an East facing slope in the Upper Yarra. 26 year old vines from Gladysdale provide the backbone of this wine which was picked on the 15/3/21, pressed to tank for 24 hours and then racked to barrel on full solids. Fermentation took approx 9 days and then the wine was stirred on lees once per week post fermentation. MLF was neither encouraged nor discouraged before SO2 was added in early May. The wine was then left in barrel until December when it was racked to tank, seeded with bentonite, filtered and then bottled.
