With a similar ripening period, but distinctly different soils, MV6 pinot noir from both vineyards was picked within a period of 1 week and treated in a near identical manner whilst being kept entirely separate. Destemmed after chilling, innoculated after 48 hours in tank, pressed to mixture of oak (10% new\/90% seasoned) to complete MLF after approx 16 days on skins. No further additions were made until SO2 was added at the start of May.
